Des Moines Vacation

Well its not really a vacation but we have to treat it as such since the house in Omaha wont be ready until some time in June. So here we are at Grandpa Jims house playing in the backyard. Paidan loves it. 

The Midwest is nice, so quiet, so much greenery,so many different kinds of birds and the people here are really nice.

Future Children

As I sit here in my front yard and watch Paidan play, I dream about my future children. How they will play with each other, how they will love each other and protect each other. Will they look alike? I hope so...


I've already picked names. Im hoping for all boys so that I only have one gender to please. lol Racing, dinosaurs, etc

If its a boy... Pascual Zenon Morris

If its a girl... Noraa Consuelo Morris

Im just in love with both names. Pascual is my Great Uncles name and Zenon is my grandfathers name.

Noraa is Aaron backwards which is Patricks middle name. Consuelo is my mothers middle name.

I cant wait to be pregnant again. Im 100% sure this pregnancy will be better. Our relationship is so much stronger. and our love is so powerful that we could move mountains. I am so happy that I'm in disbelief sometimes.

Vegan Ceviche

Vegan Ceviche
I was having some friends over and I thought about just mixing a bunch of ingredients together. But once I tasted the finished product, It tasted like ceviche. MmmmMmmm

I LOVE CEVICHE!! 

But now that Im a vegan I cant have all the things I grew up with so Im excited about this new discovery.
I used all organic ingredients and I soaked the beans overnight then cooked both the quinoa and beans in different pots. 

Ingredients
1 cup quinoa
1 1/2 cups of pinto beans, cooked then rinsed
1 sweet onion, chopped
3 roma tomatoes,chopped
1 bunch cilantro, chopped
1 avocado, chopped
Lots of lemon
Lots of tapatio
a little salt

Once the beans and quinoa were cooked, I mixed them all together. Put lots of lemon and a little salt then put it in the refrigerator so that the ingredients could blend together for an hour. Once you're ready to eat it, just add tapatio and eat it with tortilla chips. YUMMY!

Im officially a blogger

Ive come to the conclusion that I should blog. Mainly because I read this and saw that you can print it out later on. How fun. I want Paidan to see the the transition we make as parents. I want to be honest with him and tell him how his parents met, our struggles and sacrifices and the rainbow at the end of it all.

So Ive come to terms that this blog is for my little family and anyone else interested.
